Sriracha & Lime Shrimp Vegetable Ceviche

Ingredients:

  • 4 tbsp poblano pepper, slice

  • 4 tbsp celery, dice

  • 4 tbsp shallot, sliced

  • 1 cup tomato, sliced

  • 15 slices serrano pepper, thin slice

  • 2 tbsp lime, juice

  • 6 tbsp orange juice

  • 1/2 cup cucumber, sliced

  • 4 tbsp extra virgin olive oil

  • 1 tsp salt

  • 2 tsp garlic, minced

  • 1 lb sriracha lime shrimp mixed well

Garnish:

  • 1 cup tomato juice

  • 1/2 cup blue tortilla chips

  • 1/4 cup cilantro, chopped

Instructions:

  1. In a medium size mixing bowl add all the ingredients (except garnish). Let the mixture marinade for 15 minutes.

  2. In a soup bowl, garnish by pouring tomato juice then 1 cup of ceviche then crumble the blue corn tortilla chip on top of the ceviche and sprinkle with chopped cilantro.
