Sriracha & Lime Shrimp Vegetable Ceviche
Ingredients:
4 tbsp poblano pepper, slice
4 tbsp celery, dice
4 tbsp shallot, sliced
1 cup tomato, sliced
15 slices serrano pepper, thin slice
2 tbsp lime, juice
6 tbsp orange juice
1/2 cup cucumber, sliced
4 tbsp extra virgin olive oil
1 tsp salt
2 tsp garlic, minced
1 lb sriracha lime shrimp mixed well
Garnish:
1 cup tomato juice
1/2 cup blue tortilla chips
1/4 cup cilantro, chopped
Instructions:
In a medium size mixing bowl add all the ingredients (except garnish). Let the mixture marinade for 15 minutes.
In a soup bowl, garnish by pouring tomato juice then 1 cup of ceviche then crumble the blue corn tortilla chip on top of the ceviche and sprinkle with chopped cilantro.
