Four Star Artisan’s Tomato Basil Pasta with Sweet Italian Sausage, Green Olives, & Capers

Ingredients:

  • 1 pound Pasta Pappone Tomato Basil Pasta

  • 1 pack Four Star Artisan Sweet Italian Sausage, cut into ¼” rings

  • 2 cups Terlato Arrabiata Sauce

  • 2 Tablespoon Extra Virgin Olive Oil

  • ½- ¾ cup Pasta cooking water

  • 1 ½ Tablespoon Capers, drained

  • 1 ¼ cup Grape Tomato, halved

  • ½ cup Castelvetrano Green Olives, pits removed, sliced

  • ½  cup Parmigiano-Reggiano Cheese, grated

  • 1 cup Basil, fresh, coarsely chopped or torn

  • Salt and pepper

Instructions:

1.    Bring a large pot of water to a boil for the pasta and salt the water. Add pasta and cook pasta according to the package. Once al dente, scoop out your pasta water and reserve. Drain pasta.

2. In a medium pan over medium high heat, add olive oil. Add the Italian sausage and brown on all sides. Remove from the pan and reserve. Next, add the grape tomatoes, capers, olives, and four basil leaves and reduce heat. Gently sauté for 2 minutes. Add your pasta water and bring to a simmer.

3. Next, add your tomato sauce, sausage, and pasta back into the pan. Cook, swirling pan, for 2-3 minutes, or until sauce is coating noodles.

4. Finish with Parmigiano-Reggiano cheese, basil, and adjust seasoning.

Chef’s Tip: Adding a little pasta water creates a luscious creamy texture to your pasta recipes.
