Bright Farms – Citrusy Farro & Pistachio Salad
Dressing Recipe
Ingredients:
1 Naval Orange, Juiced (we used a Cara Cara Naval orange)
2 Fresh Bright Farms Basil Leaves, Chopped
Zest of 1 Orange
½ Teaspoon Kosher Salt
½ Teaspoon Fresh Ground Pepper
Instructions:
Place all ingredients in a bowl and whisk until combined
Salad Recipe
Ingredients:
1 Cup Farro
¼ Cup Dried Peaches, Chopped
1 Granny Smith Apple, Chopped
½ Cup of Pistachios
Handful of Bright Farms Baby Arugula
2 Tablespoons Unsalted Butter
Instructions:
Place Butter in a medium sized pot over medium heat. Once butter is melted, add farro and toast for 5 minutes.
Add 2 cups of water and then cover with a lid. Reduce to low heat and simmer for about 25 minutes or until the water has complete absorbed and the farro is soft and chewy. More water may need to be added if the farro hasn’t completed cooking after all water is absorbed.
Meanwhile, toast the pistachios in a skillet over medium heat for about 5 minutes, stirring occasionally. Remove from heat once the edges are roasted.
Place the dried peaches, apples, pistachios and arugula in a large bowl and add the farro once it’s cooked and cooled slightly.
Dress the salad by adding a dressing a splash at a time.
