Lexington Betty Wagyu Dog with Truffled Lobster 

Ingredients 

Lobster tail, split and broiled 

1 T butter, melted

2 Lexington Betty Wagyu Hot Dogs 

1 piece fresh corn

1T Chopped Dill

1T Chopped Chive

2 tsp Truffle oil 

½ C Dukes Mayo

Lemon juice

Lemon zest

1 Tbs dijon mustard

Brioche Hot Dog Bun, Toasted

 

Lobster 

• Split Lobster Tails and baste with Butter

• Broil for a few minutes until done, they will be opaque and the shells bright pink

• Remove lobster meat from tail

• Season with Salt & Pepper 

• Chop lobster medium dice

 

Lobster corn salad

• Preheat over to 375

• Put the corn on a half sheet pan prepared with olive oil

• Roast until tender about 15 minutes 

• Let corn cool 

• Cut the corn off Cobb

• In a bowl, add herbs, chopped lobster meat & corn

• Dress the salad in lemon juice and white Truffle oil 

• Season with cracked black pepper & rock salt

 

Truffle, mustard Aioli 

• In a small bowl combine mayo, Dijon and truffle oil

 

The Wagyu Dogs 

• Cook wagyu dog on flat top grill for about 10 minutes

• Be sure to get some nice color on the meat. When the wagyu dog is ready put it inside a toasted brioche bun

• Spread the Aioli underneath and on top of the wagyu dog 

• Spoon the lobster salad on top of the wagyu dog & enjoy
